Spicy Turkey Enchiladas

Ingredients:
1 lb. ground turkey breast
1 10 oz. can enchilada sauce (I use Trader Joe’s)
1 large onion
5 oz. shredded cheese – I use cheddar
5 reduced carb tortillas
hot sause to taste
salsa to taste
sour cream to taste
Directions :

spray skillet with non stick spray. Add onion and meat and cook until browned. Stir in half the can of enchilada sauce, and 2.5 ounces of the cheese. Remove from heat.

Coat a 9×13 baking dish with non stick spray. Divide the meat mixture evenly among the tortillas, and roll tightly placing them side by side in baking dish.

Pour the remaining enchilada sauce over the top of rolls, then sprinkle with remaining 2.5 ounces of cheese.

Bake at 400 degrees for 10 minutes, or until the cheese is melted and edges of tortillas are browned.

Garnish with sour cream (for fat), salsa and hot sauce.

Recipe makes 5 servings, each with 3 blocks of protein, 3 blocks fat, and 2 blocks carbs. Serve with a side salad and extra sour cream.
