This is a good recipe for when it’s too hot to cook inside and you need something quick but light.
The most time consuming part is the chopping.
Prep time: 10 minutes
Assemble time: Less than 5 minutes

Ingredients:
Spinach
Tomato
Mozzarella
Prosciutto
Herbs:
Basil
Cilantro
Green Onion
Spices:
Salt
Pepper
Dried Oregano
Liquids:
Balsamic Vinegar
Olive Oil
Instructions:
1.
Chop herbs, tomato, and mozzarella into a  separate bowl. Mix well. This will create the topping for the salad.
2. Season the topping with the spices to taste.
3. Wash and chop spinach. Place into a bowl.
4. Drizzle balsamic vinegar and olive oil to preference. Mix spinach and liquids well.
5. Pick apart prosciutto and place on salad.  (Protein!)
6. Scoop topping onto salad.
